Smothered Chicken by Taste of Home has been one of our family’s favorite recipes for years, so much so that we’ve over done it at times, LOL! We did not have it at all while Mr. B was gone for his 15 months so shortly after he arrived back we decided it was time to reintroduce it back into the meal planning.
It meets all my ‘requirements’: it’s super easy to make, quick, and can be easily modified for my ‘sensitive palate’ eaters ;p
I lightly pounded the chicken with a meat pounder on both sides & then season and throw into the pan to cook. I follow the receipe for the seasoning, no modifications are needed to it.
Here in the last 5 minutes is where I make modifications. It calls for cheese, bacon bits, green onion, and mushrooms on all. As you can see that doesn’t happen here but it has changed a bit over the years and has got a bit more uniform. Mr. B has everything except for the mushrooms. I have it all on mine as well as Boo’s. Bea wanted all with the exception of only 1 mushroom, hey whatever works, LOL! Bub stuck to his normal and only had cheese & bacon…which is what all 3 kids used to have…as you can see some are venturing out more than others.
As soon as the cheese is melted it’s ready to serve, and it’s gone in no time around here! This last time we had it with Baked Broccoli.
This really is super easy to make, tastes yummy, and allows for those of you who have people who need some modifications. I love the Quick Cooking books by Taste of Home, which is where I originally found this receipe and where I use it from when I make it 🙂
