This has become one of my favorite soup recipes, although I just made it for Mr. B and he prefers the Chicken Enchilada Soup we make, which I’ll post at a later date.
Again this is a super simple and quick recipe which makes it a keeper here, well at least for me 🙂 Guess it’ll be a TDY or Deployment recipe since Mr. B is stuck on the other one.
Chicken Tortilla Soup
½ can of chicken broth
1 large can of chicken
1 can Rotel (don’t drain, can puree if needed)
1 can cream of chicken soup
1 lb Velveeta
2 tbsp taco seasoning
Pour all canned ingredients into a saucepan and mix. Add taco seasoning and bring to a boil. Cut Velveeta into chunks & add to saucepan. Reduce heat and stir until Velveeta is melted. Served with tortilla chips and sour cream if desired.

All the ingredients needed, you only need about 1/2 of the packet of taco seasoning
I pureed the Rotel, as I wrote about here for my picky palates eaters, i.e. Mr. B
Dumped all the canned ingredients in with the taco seasoning and set it to high to boil, I stirred it occasionally.
Dropped in the Velveeta and waited for it to melt.
Served with tortilla chips and sour cream, delish! Quick, easy, and oh so good!
