I found this tasty recipe over on the Six Sister’s Stuff blog while Mr. B was deployed. It soon became a favorite for us. Even better this recipe required only one modifications for my family, double bonus points! It’s quick & easy, just the way I like it!
I wanted to try it for Mr. B and he wasn’t so sure it was going to be a keeper, but was willing to give it a try.
First I lined my crockpot with a liner so it it would be super easy to clean up, these things are AMAZING! Then added my potatoes. If I know that I’m working and have to leave at 7 am in the morning I will often cut the potatoes the night ahead of time (if I can remember) and soak them in water in the fridge. The next morning I just drain them and put in crockpot. It’s a great timesaver for mornings you need to get out the door quick!
I mixed all the ingredients together. If I’m smart enough to plan the night ahead I have them all lined on the counter next to the crockpot minus the milk so that I can quickly mix them up in the morning.
Then you throw the meat on top. Here is the modification I made, instead of buying pork chops, I buy pork scampi. There are a few reasons why. I did try it with the pork chops, but they were really hard and tough, I’m not sure why. So the next time I bought the scampi since it’s sliced thinner. One $2.xx package is enough for my family. There really isn’t even anything that I need to cut off so I just throw it in right on top of the potatoes. Also I’ve found with the scampi it becomes super tender and just melts in your mouth!
I add the sauce and then throw on the lid, turn it on low and know dinner will be ready and tasty after a long day!
The sauce makes the perfect gravy for the meat and the potatoes! The meat is a bit hard to see here because it gets so tender and soft, but trust me it’s amazing!
Mr. B was quite surprised that it was really good, so it’s a keeper for him, yippee!! If your looking for a quick and tasty crockpot meal I suggest you head on over and print out the recipe!
