My friend’s birthday is the 4th of July and since her hubby is deployed I wanted to make her a yummy treat! I decided to do Red Velvet Cupcakes with an Almond Bark blue star garnish to go with the whole Red, White, & Blue theme.
The cupcakes were easy I just used a box mix from the store, but I wanted to make homemade cream cheese frosting because it’s delicious! I used the recipe from Simply Recipes and it was super easy and so good! I did double the recipe though so I would have enough for 24 cupcakes, and doubled it was just enough.
I had made some cupcakes awhile back with heart garnishes and I remembered that I had a star ice cube tray so I wanted to make stars for some of the cupcakes.
They were really easy to make. I melted some white almond bark in the microwave and then added blue food coloring. Now I realize that your not ‘supposed’ to use liquid food coloring with almond bark BUT I didn’t have any gel or powder so I made it work. Yes, it made the almond bark start to get more solid so I couldn’t pipe it into the molds but I just spooned it in and pushed it down.
I then put in them in the fridge and let them harden. When they were hard we just popped them out, the bottom of the mold is silicone so it was easy to push them out.
Then I put the frosting in a gallon ziploc bag, cut off the tip and piped it onto the cupcakes. I had also baked the cupcakes in white wrappers and then popped them into the red & white dotted ones because I didn’t want them to get all yucky looking. And I scored the wrappers on clearance awhile back at Hobby Lobby for 29 cents, woot!
They were so stinking yummy!
The mold only made 11 stars and so I decided to put blueberries on the rest to mix it up a little.
So glad we took them to the BBQ because I could’ve ate way too many of these!!

I’m glad it worked for you! This reminds me of last year when I tried to make something with chocolate and blue {liquid} food coloring for 4th of July and it turned out AWFUL! The chocolate turned out all lumpy and gross, I had to throw it out and quickly come up with something else to bring to our friend’s house! But your’s turned out great! 🙂

Yeah I could see how that happen, that’s why my stars weren’t as blue as I’d like them! I had to stop adding color to keep it from turning unusable. Will be getting some powder or gel to have on hand.
